More not-oatmeal! When I get home from work at midnight, it's completely understandable that pancakes are THE option. I don't want regular flour, because that tastes just like jack and shit, so I took to the internet, researched alternative flours, made countless shitty pancakes and created a few bangin-ass recipes. The following is one of them.
- 1/4 C Whole Wheat Pastry Flour
- 1/4 C Buckwheat Flour
- 1 T Flax, Ground
- 1 t Baking Powder
- 1/2 t Sugar
- 1/4 t salt
- 1/4 - 1/2 C Nut Milk
- 1/4 C Yogurt (Greek or Skyr work best)
- 1/4 C Blueberries
- 1/2 Medium Mango
- 2 t Honey
- Juice Of Half A Lemon
- 1 T Sake (Optional. Use more lemon juice if not using.)
- Bit Of Water
- 3 inch piece of Lemongrass (optional, but awesome)
- Banana, Sliced
- Cashews, Toasted
In a large bowl, mix all dry ingredients together, except for the Flax. Mix Flax with 1T of Water, making a Flax "egg" and set aside. In a separate bowl, mix the wet ingredients. Whisk the wet ingredients and Flax "egg" into the dry ingredients. Set aside.
In a small saucepan, over medium heat, put Blueberries, Mango, Honey, Lemongrass, Lemon Juice, Sake and about 2T of water. Cook down until most of the liquid has reduced and turned into a syrup. Remove and discard Lemongrass, then strain the syrup from the fruit, keeping both.
Put oven on warm and line a sheet tray with parchment. On medium heat, oil a frying pan with 1t Coconut Oil. Let oil melt and get hot. With a tiny bit of batter, test the pan. You do not want it too hot, otherwise the pancakes will spread out, like assholes and burn. If the tester sizzles all nice, pour each pancake in the pan one 1/4 C at a time. Once you see a lot of those nice bubbles on the top of them cakes, flip em. Leave them to cook for about 2-3 minutes. Once cooked, place them on the sheet tray and place them in the oven. Keep cooking the pancakes until there's no more batter. Duh.
Plate the pancakes however the hell you'd like, topping them with the fruit and sliced Banana. Pour syrup over everything and top with Cashews, if using.
